Cottage Kitchen: SA sourced and sustainable

Just off Wellington Square on Tynte Street there’s a 19th-century style building that’s home to one of Adelaide’s newest restaurants – Cottage Kitchen.
The menu is brimming with simple, but flavour-packed dishes, showcasing South Australian produce at its best.
We caught up with Majestic Hotels, Group Food and Beverage Manager Emilee Moore to chat about the ethos behind Cottage Kitchen.
sa move: How did the concept of using strictly South Australian produce come about?
Emilee: A key value for us was to support the local community and South Australian producers. we wanted to highlight the quality and variety that is available in South Australia.
It took six months to source everything from South Australia, and we went with everything right down to packaging and sugar. We even found tequila that was made in South Australia – who would’ve known we make that here!
Ninety-nine per cent of our spirit shelf is from South Australia. Once you start looking, you find places you’ve never heard of and a lot of them are small businesses. So, we’re buying South Australian and supporting small businesses at the same time.
sa move: What can diners expect when they visit?
Emilee: The Mediterranean inspired menu offers fresh and delicious dishes including 36° South steak or Scotch Fillet from Naracoorte, Southern Reef Whole Squid, SA King Prawns and local Chicken from Clarendon.
We also have an extensive selection of gluten free and vegetarian options. The South Australian exclusive wine list features favourites from across the regions alongside a wide selection of local beers and signature cocktails.

sa move: Was the type of cuisine a factor in best showcasing SA produce?
Emilee: Mediterranean cuisine definitely gives us the best chance to showcase food from SA producers and farmers.
We get to use so many local products that are fresh daily, for example, fresh tomatoes from a local grower and delicious olives from Penfield.
We source as much as we can from regions like the Barossa and Adelaide Hills. When you eat here, you’re not getting something that’s flash frozen or shipped from interstate or overseas.
We’re also excited to showcase our selection of SA cheeses, all from the Adelaide Hills and Barossa. I don’t think people realise just how much South Australia has to offer.
sa move: What are your aims in terms of sustainability?
We are passionate about sustainability and focus on minimising waste. Some of the steps we are taking to minimise our footprint include sourcing quality produce from locally based suppliers, milk supplied on tap to avoid plastic bottles, coffee supplied plastic free, using compostable and recyclable packaging, and implementing an extensive waste and recycling management plan.
We source everything that’s compostable, both commercially and residentially. So, when people buy takeaway cups, we say to them that they can put it in the green bin.
We even recycle our dry waste products. Customers can purchase our signature Cottage Kitchen Coffee bean blend in our CK tin, and our local milk in a glass bottle, then bring both back for a refill, we love offering zero waste opportunities.
